I just run my BB mono. but i notice that when i change the audio settings to stereo the sound improves and the instruments sound louder and better, even though i run a mono cable to the mixer.
would it make sense to connect a cable with 2 mono plugs on the BB and on the other side of the cable only 1 mono plug on the mixer?

Yes this is likely because the Drum Set has stereo Wav files that have phase issues when turned into mono
To have a truly unfettered mono experience, the original files must be mono, or at least recorded and checked for mono compatibility before being loaded into BB
It is meant as a quick solution setting for people that may only have one channel on the mixer available, but we always recommend the stereo for the fullest sound an experience with the BB
