How much Fidelity do I lose by using a single mono cable set up?

It’s not always a question of fidelity, given the drum set you are using has mono files in it. However, if the drum set is made of stereo files, turning them mono (Audio Settings > Drum Output > Mono) will potentially change the sound of those elements due to phase cancellation (an acoustic phenomenon that can happen when monoizing a stereo signal).
It may not be very noticeable or it could be very noticeable, it all depends on the files used
As far as how much fidelity, you lose, this is not really quantifiable, but it is not a perfect reproduction of the sounds as intended.
It really depends on your goals too, in a live setting, this likely would not make any noticeable difference to the overall sound.
