Is it possible for me to delete the drumless intro and just kick it in at my own pace?

It should be but best to do the edit with a DAW, especially for the v3 song. I would not use the built–in BBM MIDI Editor.

Here’s the trimmed v3 that does away with the count-in and the 15 bars of blank space:
